Went over to one of our SCA friend's house because he was teaching a class about making and drinking mead. Mead is Honey wine and the Vikings were known to drink and make it, so being the good little SCA Viking that I am, I'm making my own in the basement. Since I'm new to it I'm always willing to go to classes to learn more about the process. It didn't hurt that he also had a tasting going on too. Mead making is a slow process, mine has been bubbling since September of last year. I found out today in the class that the reason mine is taking so long to finish is that I've made a basic mead that is really just honey, water and yeast. Without something to help it out the yeast will only work slowly on changing the honey to alcohol, since the sugars in honey are more complex that typical cane sugars. So when I do my next batch I'll use some of the tricks I was taught yesterday to speed up the process.
